We haven't "evolved" to eat meat. Our species has grown eating BOTH meat and edible plants, before it was whichever was more readily available and now (most/many of us) we eat what we choose.

Fruit. Grains. Nuts. Seeds. Legumes (beans, peanuts, peas, etc.). You lose. There are plenty of ways to eat vegan AND not eat processed food. You just have to see past the processed crap that YOU buy every week at the grocery.
I was vegan for a year, and it turns out the best diet for humans is that of our natives (crazy, huh?). That means no sugars, grains, and most carbohydrates. Good: fruits, veggies, and lean wild meat and/or grass-fed ruminants (but not corn-fed, grain-fed, etc.) And of course factory farming was always a bad idea.
Okay, do I deserve to be flamed for taking this discussion too seriously? Probably.
I don't know about elsewhere, but here in Oregon vegans are pretty common, but it seems only in the larger (read: college) towns. In Eugene there are many vegan shops and restaurants. Not my cup of tea, though.
